Spring Superfood & Quinoa Tabbouleh

Tabbouleh is a traditional Middle Eastern dish usually made with bulgur wheat, tomatoes, parsley and mint and dressed with a fresh lemon juice and olive oil combination. To make the dish gluten-free I often use quinoa or wild rice instead, which adds a nice boost of flavor and protein. This salad is a perfect meal for a warm spring day, pairing well with grilled meats, seafood and veggies!
